Special German Christmas Cookies |
These days we are all waiting for the big feast. Therefore there is not much happening in my kitchen. We eat "light" to have room for the holiday calories to come.
Today J.P. baked his beloved "Schmalzpätzchen", a recipe from his native northern Germany. 'My mom used to make "tons" of them each year', he told me, 'and we kids just loved it.'

Ingredients:
2 cups lard, (from pork, clean, tasteless)
2 1/2 cup sugar
content of 1 vanilla seed pod
1/4 tsp salt
1 egg yolk
2 2/3 cup flour
2 tbs. unsweetened cocoa powder
1 ts. baker's ammonia (we used 1/2 each of baking powder and baking soda)
Melt lard and cool. Mix sugar, vanilla and salt with the lard. Dissolve Baker's ammonia in a little water. (blend baking powder/soda with the flour).
Knead all ingredients into a soft dough. Part half of the dough and knead in cocoa powder.
Chill dough over night.
Roll out and form 1/2 inch diameter balls. Press a little down in the middle. Bake at 375 F for 15 - 20 minutes. They should not get brown.

Die Plätzchen sind gut geraten und ich vernehme ein "MMMH" wenn die notwendigen Kostproben vorgenommen werden. :))

375 g Schweineschmalz
500 g Zucker
2 Tüte/n Vanillezucker
1 Prise Salz
1 Eigelb
625 g Mehl
2 EL Kakaopulver
1 TL Hirschhornsalz
Schmalz schmelzen, etwas abkühlen lassen. Zucker, 1 Vanillezucker und Salz hinzufügen und gut verrühren. Hirschhornsalz in etwas Wasser auflösen und zusammen mit dem Mehl dazugeben. Alles gut verkneten. Eine Hälfte vom Teig abnehmen und den Kakao und 1 Vanillezucker unterkneten.
Ca. 90 Stück als Kugel formen und in der Mitte etwas eindrücken.
Gebacken wird bei 200 Grad etwa 15-20 Minuten. Die Plätzchen sollen hell bleiben.
Idag baker gubben nordtyske julekaker. "Moren min bakte store mengder av dem hvert år i juletiden, " sa han til meg, "og vi bare elsket dem".
Baksten var vellykket og jeg hører et tilfreds "Namnam" fra sofakroken. :))
Ingredienser:
375 g svine smult
500 g sukker
2 ss vanilje sukker
1 klype salt
1 eggeplomme
625 g mel
2 ss kakaopulver
1 ts ammonium bicarbonat (eller 1/2 ts hver av bakepulver og bake sodapulver)
Melt smult and kjøl litt. Bland in sukker, vanijesukker og salt. Ammonium bicarbonate blir oppløst i litt vann. (Miks bakepulver og soda med mel).
Alle ingredienser knars til en myk deig. Sett tilsides halvparten av deigen og tilføy kakaopulver. Deigen skal kjøles ned natten over.
Deretter lages små kuler av deigen som bakes ved 200 Grader i ca 15 - 20 minutter. De hvite julekaker skal ikke være brun.
