Exotic Pork Filet, Iceberg Salad and Potatoes

Today was the first day that I actually bought something with this recipe in mind - fresh ginger. The ingredient list also required fresh chilli and mango, but I changed it to things you will find in my pantry: a can of pineapple chunks and "Tapatio" hot sauce. (Tabasco or similar)
First set potatoes to boil. Make a salad of iceberg salad leaves. Season with salt, pepper, 2 tbsp lemon juice, add more sugar than normal and 2 tbsp whipping cream. The salad shall be sweet and sour and match the meat sauce.
For the exotic sauce: mince 1 wedge garlic, 2 tsp fresh ginger, 2-3 tbsp pineapple chunks, 1 slice red and 1 slice yellow bell pepper, 1 tbsp honey and 1 tbsp paprika powder. Season with a dash of salt and 2 spritzer of "Tapatio" hot sauce. Bring all to a boil and simmer on low for some minutes.
I used a hand held immersion blender to puree the sauce. Add some starch to thicken if necessary, or a little fresh whipping cream.
I made some more sauce because I will re-use it in another dish later this week.
Slice filet meat (ca 1 pound) into 1/2 inch pieces and brown it in hot vegetable oil until done. (About 2 minutes per side). Arrange on a plate and cover with the sauce.


Desert: fresh strawberries and whipped cream.

Remark: I definitely would prefer brown rice with this dish.

Exotisches Schweinefilet, Eisbergsalat süß/sauer und Salzkartoffel
Heute habe ich ausnahmsweise etwas speziell für dieses Gericht gekauft - frischen Ingwer. Eigentlich sollte auch Mango und frische Chilli Schoten dran sein, aber ich habe das Rezept in Anbetracht meiner Vorräte etwas abgewandelt. Anstelle nehme ich Ananas aus der Dose und Tabasco Sauce.
Zuerst die Kartoffel zum Kochen aufsetzen. Dann aus ein paar Blätter eines Eisbergsalats einen knackigen Salat herstellen. Mit Salz, Peffer, 2 Eßl. Zitronensaft, etwas Sahne und mehr Zucker als gewöhnlich würzen. Er soll süßsauer schmecken und damit besser zur exotischen Soße passen.
Für die Soße: 1 Koblauchzehe, 2 Tlf. geriebener Ingwer, 2 Eßl. Ananas, je 1 Streifen roter und gelber, eingelegter Paprika in kleine Stücke schneiden und kurz in etwas Ananassaft aufkochen. Mit 1 Eßl Honig süßen, und mit 1 Eßl Paprika und 2 Spritzern Tabasco würzen.  Evtl. mit Maizena andicken, oder etwas Sahne dazugeben. Mit einem Stabmixer wird die Soße pürriert. Ich mache etwas mehr Soße als geplant, denn ich will sie im Laufe der Woche wieder in einem anderen Gericht verwenden.
Das Schweinefilet (ca 500 g) in fingerdicke Scheiben schneiden und kurz in heißem Öl anbraten. Beim Anrichten die Soße drüber geben.
Als Nachtisch: Frische Erdbeeren mit Schlagsahne.

Eksotisk svinefilet, isberg salat og poteter. 
I dag kjøpte jeg fersk ingefær slik at jeg kunne lage denne eksotiske sausen. Oppskriften krever også mango og chilli pepper men jeg endret det slik at the passer bedre til hva er tilgjengelig på kjøkkenet mitt - 1 boks med ananasbiter og Tabasco saus.
Sett poteter opp for koking først. Lag en salat av isbergsalaten og smak til med salt, pepper, sukker, 2 ss sitron juice og litt kremfløte. Bruk mer sukker enn vanlig; salaten skal være sur/søt til å matche den eksotiske sausen.
Til sausen: kutt 1 fedd hvitløk,2- 3 ss ananas biter, 1 ts ingefær, 1 stykke rød og 1 gul, sylted paprika i små biter. Simmer i litt av ananas juice og smak til med 1 ss  honning, 2 skvett Tabasco og 1 ss paprika pulver. Tykk til med potet mel og tilfør noe kremfløte. Jeg brukte stavmixeren min til å pureere det hele.
Skjær svinefilet i skiver og brun i warm olje fra begge sider. Server kjøttet dekket med sausen.
For dessert: Jordbær med kremfløte.

Pork Filet, Butter Rice and Tomato Salad

The other day my husband brought a 2 pound pork filet home from his shopping spree. The half of it  will be our dinner today. The other half we will have for dinner tomorrow.
First set a cup of brown rice to boil. It takes about an hour. While it simmers slice 2 ripe tomatoes and the very tip of a wedge of garlic, just a few bits. Season salad with olive oil, salt, pepper, sugar, basil and juice of 1/2 lemon. Not satisfied with that I find a piece of white cheese and cut some cubes into the salad as well.
For the meat we need only a few minutes to cook. So wait until the rice is done. Add a clad of butter and a little salt to it before serving.


Slice the filet meat in 1/2 inch slices and heat vegetable oil in a pan. When really hot fry the meat shortly from both sides. This is very tender meat and it does not take long to get done. Take out of the pan and set to a warm place for a few minutes. Before serving season the meat with salt, pepper and coriander.
As my husband needs his sauce to every meal, I open a can of mushroom soup and heat 1/2 of its content  in the frying pan. Add a tbsp parmesan.
For desert today: Yoghurt with strawberry jam. Done.

Schweinefilet, Butterreis und Tomatensalat.
Neulich brachte J-P ein Kilo Schweinefilet vom Einkaufen nach Hause. Das werden wir heute teilweise verarbeiten. Die andere Hälfte gibt es morgen.
Zuerst wird 1 Tasse brauner Reis zum Kochen gebracht. Der braucht etwa eine Stunde. 2 reife Tomaten in Scheiben schneiden, mit Olivenöl, Salz, Pfeffer, Zucker, Basilikum und Saft 1/ 2 Zitrone würzen. Zur Abwechslung streue ich noch ein paar Würfel Gouda (oder ähnlicher Käse) darüber.
Das Filet braucht nur eine geringe Garzeit. Wenn der Reis gar gekocht ist gebe ich noch einen Eßlöffel Butter und etwas Salz dazu.
Das Fleisch in fingerdicke Scheiben Schneiden und in heißem Öl kurz von beiden Seiten bräunen. Die Scheiben dann aus der Pfanne nehmen und warm stellen.
Soße darf nie fehlen, meint mein Ehegatte, deshalb wird aus 1/ 2 Dose Champingcremesuppe in der selben Pfanne aufgwärmt eine Soße. Ein Eßlöffel Parmesankäse gibt ihr eine andere Geschmacksvariante.
Zum Nachtisch; Yoghurt mit Erdbeermarmelade. Das wär's für heute.




Det Norske Hjørnet
Svinetfilet, kokt ris med smør, og tomatsalat.


For noen dager siden kjøpte mannen min et svinefilet og halve porsjonen vil vi ha til middag idag. Den andere halvdelen vil vi bruke i morgen.
Først settes 1 cop brun ris opp for koking, dette tar circa en time.
I mellomtiden skjær 2 tomater i skiver og smaker til med salt, pepper, sukker, basilikum og juice av 1/2 sitron. Noen veldig få biter of hvitløk kan også brukes. Noen hvitost terninger gir noe ekstra smak til salaten.


Filetkjøttet bruker veldig lite tid til å steke. Vent til risen er ferdig, smaker den til med salt og smør. Skjær så kjøttet i 1 cm tykke skiver. Skiver brunes i varm matolje fra begge sider. Tar ferdig stekt kjøtt ut av pannen og smaker til med salt, knust pepper og allehånde. Sett tilsides for noen minutter.
Sausen må det også være, derfor åpner jeg en boks med champignonsuppe og varmer halvparten i samme pannen. Tilfør en spiseskje med parmesan ost.
Desserten: Yoghurt med jordbærsylteøy.

Fried Potatoes, boiled Ham and Vegetables

Maybe someone realized that yesterdays meal is missing.The "chef" was invited out to dine at the local golf club.
Therefore the use of our boiled, cold potatoes had to wait until tonight.
First set 4 carrots and 1 cup of peas up to boil. Mince 1/2 onion and some smoked bacon. Slice cooked potatoes. Heat 2 tbsp vegetable oil in a pan and fry onion and bacon first. Then add the with potatoes and fry until light brown.
Drain vegetables and add a clad of butter and some nutmeg.
Slice boiled ham and arrange all on a plate. Evtl. add some sauce tatar.
Simple and fast: Fried potatoes, boiled ham and vegetables.

Vielleicht hat es jemand gemerkt, aber: "gestern war die Küche kalt, da gingen wir in den Wienerwald", oder  wie der Spruch so schön heißt. Natürlich nicht - aber wir sind zum Restaurant am hiesigen Golfplatz gewesen.


Deshalb gibt es die gebratenen Kartoffel erst heute abend.


Diesmal gibt es ein Gericht das ich sehr oft in Norddeutschland gegessen habe.
Erst einmal Karotten und Erbsen aufsetzen, dann eine halbe Zwiebel schälen, geräucherten Speck würfeln und die Kartoffel in Scheiben schneiden. Etwas Öl erhitzen, erst die Zwiebel und den Speck anbraten, dann die Kartoffel dazu geben. Das Wasser vom Gemüse abgießen. Karotten und Erbsen mit einem Tlf. Butter und etwas Muskatnuß würzen.
Scheiben vom gekochten Schinken abschneiden und alles auf einem Teller anrichten. (Man kann auch rohen Schinken nehmen). Sichtbar auf dem Schinken ist etwas Remouladensauce.
Einfach und schnell. Bratkartoffeln, gekochter Schinken und Gemüse.

Almond breaded Pollock and Tomato/Cucumber Salad

My husband is thrilled because he thinks that our dinners have improved since I started to blog about it. Well, well, isn't that something?


Today I we will have a fish day. The recipe asks for Tilapia, but I only have pollock. We will see how it goes.
For side dish I prepare a tomato/cucumber salad. And - of course - potatoes. I will boil more than for one meal because, for tomorrow I need some cold, cooked potatoes.
Start with peeling potatoes and setting them to a boil. After that slice 1-2 tomato and 1/2 , peeled salad cucumber. Season with each 1 tbsp vegetable and olive oil. Add salt, pepper, dill, basil and sugar. Mix well and set aside.
Now to the fish.
We need 2 eggs,1 teaspoon lemon pepper,1 teaspoon garlic pepper,1 cup ground almonds, 2 tbsp Parmesan cheese, flour and 4 fish filets.
Beat the eggs, the lemon- and garlic pepper until well mixed and set aside.
Stir together ground almonds with 1 cup of Parmesan cheese in another shallow dish.  Dust the fish fillets with flour. Now dip the fish first in egg, then turn it in the almond mixture.
Heat a pan with 4 tbsp butter and 1 tbsp vegetable oil and fry the fish on medium heat for about 3 min per side, or until they are done.
Serve with parmesan cheese on top, or like my husband likes it, with tartar sauce. (Here I used some leftover sauce from the day we had potato salad).


Today's dinner: Almond breaded pollock with tomato/ cucumber salad.


Remark: There was no problem using pollock instead of tilapia.


Die Deutsche Ecke:
Köhlerlfischfilets mit Mandelkruste, Tomaten/Gurkensalat und Salzkartoffeln.
Die Kartoffel schälen und zum kochen bringen. 1 - 2 Tomaten und 1/2 geschälte Salatgurke in Scheiben schneiden. Salatsoße aus 1 Eßl Salatöl, 1 Eßl Olivenöl, Salz, Pfeffer, Zucker, Dill und Basilikum bereiten. Gut mischen und zur Seite stellen.
Für den Fisch: 2 Eier, 1 Tlf Zitronenpfeffer, 1 Tlf Knoblauchsalz, 100g gehackte Mandeln, 2 Eßl (oder mehr) geriebenen Parmesankäse. Die Eier mit den Gewürzen in einem Teller vermischen; die Mandeln mit dem Parmesan in einem anderen. Die Fischfilets mit Mehl pudern und zuerst in die Eimischung geben und dann in der Mandelmischung wenden.
In einer Pfanne 4 Eßl Butter und 1 Eßl Öl erhitzen und die Fischfilets auf mittlerer Hitze ca 3 Minuten von jeder Seite braten, oder so lange bis das sie gar sind.
Mit frischem Parmesan servieren, oder wie J-P vorzieht: mit Remuladensoße.
(Hier hatte ich noch einen Rest Soße vom Kartoffelsalat).
Mit Gurkensalat und Salzkartoffel servieren.
Das Rezept schrieb eigentlich Barsch (Tilapia) vor, aber es gab keine Probleme mit dem Köhlerfisch (Pollack).

Stir Fried Vegetables with Brown Rice

Today I had to go to town and I was again back just before dinner time. Therefor a quick meal was imperative.
The first  thing I did, after putting down my purse, was setting 1 cup of brown rice to boil with 1/2 cup of water and a cube of chicken broth. This type of rice takes between 45 - 60 minutes to cook. I could have used 5-min rice but, we like the brown variant better.


15 minutes before the rice is done I and cut all kind of vegetables into smaller pieces.
1 carrot, 1/2 red bell pepper, some broccoli, a stalk of celery, 1/2 cup of frozen peas, some sweet corn kernels (leftover from yesterdays meal), 1 onion, (1 clove of garlic). Heat 2 tbsp vegetable oil,1 tsp olive oil and stir onion and garlic first, add carrot, celery and fry for 3 - 4 minutes until filling up the rest of the vegetables. Season with salt , black pepper and ginger. Fresh ginger would be the best but I found only powered ginger between my backing stuff. While looking for the ginger I found a jar with sesame seeds. I added 1 tablespoon into the pan as well.
Since my dear husband needs some meat with the dinner I sliced some sausage for him and added it just before I filled up the plates.


Dinner today is: Stir fried vegetables with brown rice.

Remark: In case someone wants to know: Yes, we only eat one helping. To keep the weight down! :))

Heute war ein Stadbesuch angesagt und ich kam deshalb erst kurz vor der Abendbrotzeit nach Hause. Ein einfaches Mahl war mein Ziel.
Gleich nachdem ich ins Haus kam habe ich erst einmal eine Tasse Naturreis mit 2,5 Tassen Wasser zum Kochen aufgesetzt. Der Reis dauert etwa 1 Stunde bis der gar ist. Ich könnte 5 Minuten Reis verwenden, aber wir bevorzugen Naturreis.
15 Minuten bevor der Reis gar ist bereite ich verschiedene Gemüse vor. 1 Karotte, 1/2 rote Paprika, 1 Stange Sellerie, 1 Tasse Mais (Rest von gestern), eine Rosette Broccoli, 1/2 Tasse gefrorene Erbsen, 1 Zwiebel und (1 kleine Zehe Koblauch).
2 Eßl Speiseöl, 1 Eßl Olivenöl erhitzen und die Zwiebel mit dem Knoblauch anbraten. Karotten und Sellerie hinzufügen, eine Weile braten und nach und nach den Rest hinzufügen. Mit Salz, Peffer und Ingwer würzen. Frischer Ingwer wäre besser, aber zwischen meinen Backutensilie konnte ich nur gemahlenen Ingwer finden. Doch ich fand auch ein Glas mit Sesamkörnern von denen ich dann noch 1 Eßl zum Gemüse gab. Und weil mein liebe Gatte nun einmal gerne Fleisch ißt habe ich kurz vor dem Servieren noch ein paar in Scheiben geschnittene Würstchen beigefügt.

Und wenn einer fragt: Ja, wir essen nur eine Portion. Wegen der schlanken Linie!

Grilled Steaks, Onion/Mushroom Sauce and Sweet Corn

We need:
2 steaks, 1 can of sweet corn kernels (or 2 corn on the cob), 1 onion, 1 can of mushroom soup (or fresh mushrooms), garlic, potatoes.

Today I took the time to peel and quarter my potatoes before boiling, as a special request for one blog reader. 
That's more the German way of doing I guess.








Marinade the steak with a mixture of: 1/4 cup of ketchup, 1 tsp mustard, 1/2 tsp ground pepper and coriander, 1 small clove of garlic, 1/2 tsp ground coffee. (Right, I said coffee) Spread half of this mixture on one side of the steak, set aside  while the grill heats up. Put the steaks on to the grill with seasoned side down and spread the rest of the mixture on the other side of the meat. Grill until done

Chop 1 onion and mince another clove of garlic and fry all in 1 tsp of olive oil. Fill up with 1/2 a can of mushroom soup. Add 1/2 tsp balsamic vinegar and salt. The sauce would be even better with fresh mushrooms, but there are none in the fridge. Heat a can of sweet corn kernels or boil 2 corn ears. 


Today's meal:
 Grilled Steak, Mushroom/Onion Sauce, Sweet Corn.

Remark: Maybe the sauce looks a little pale, but it tastes good.




Die Deutsche Ecke:
Gegrillte Steaks, Zwiebel-Pilz Soße, Mais und Salzkartoffel

2 Steaks, 1 Dose Mais, (oder frischen Mais), 1 Zwiebel, 2 kleine Knoblauchzehen, 1 Dose Champignoncremesuppe (oder 100 g frische Pilze), Kartoffel.

Auf Wunsch eines Lesers aus dem Rheinland werden heute die Kartoffeln aber vor dem Kochen geschält!  ;)) 

Dann eine Dose Mais aufwärmen oder 2 Maiskolben kochen.
Die Fleischstücke werden mit einer Mischung aus: 4 Eßl Ketchup, 1 Tlf Senf, 1 kl Koblauchzehe, 1/ 2 Tlf gemalener Pfeffer und Koriander und 1/2 Tlf  Kaffemehl bestrichen und gegrillt.
1 Zwiebel und 1 kl Zehe Knoblauch kleinschneiden und in etwas Olivenöl anbraten. Mit 1/2 Dose Championcremesuppe auffüllen. Mit 1/2 Tlf Balsamicoessig und Salz nachwürzen. Besser wären natürlich frische Pilze, aber die habe ich gerade nicht im Kühlschrank.
Das wär's für heute.
