A Diet on the Horizon?



The day started out with plenty of sunshine and, we had a short walk in the nearby Provincial Park. Later the clouds moved in and there is some snow in the forecast for Easter Sunday.


An article I read yesterday made me think again.
His diet is even covered by Medicare.
We should do some changes in our lifestyle that is too sedate for months on end and, with an old fashioned way of cooking. No wonder the bloodpressure is on the rise.
The afternoon I spent planing some food changes. Even if I have to split-cook it will be worth a try.
J.P. got his pork ribs with veggies and sauce.




My plate was  just a little different.

Dessert: baked apple with vanilla sauce.
Sonnenschein am Vormittag den wir mit einem Spaziergang ausnutzten. Leider war der Wind noch ziemlich kalt.

Weed eater for pork chops


Still too cold to go gardening. But we did some brush clearing today.

Boy, are we out of shape after the lazy winter months! No good at all.
See Molly keeps a piece of wood in her mouth, kind of her way to help.
I searched around on the net for ideas about square feet gardening until
it was time to fix dinner. 
Today was my turn again. I decided on string beans, carrots and pork chops.

does anyone know why I got these kind of photos on some of my posts?
I never got a warning either.
In one of my posts I had to remove 5 of these. What happened?
Any idea?

Peter's Pollock and Vegetables


Today was J.P.s kitchen day!
We were gone the whole day on various errands including grocery shopping.
When we finally came home he offered to do the cooking.

Fine - I took my camera and went for a walk with the dog. (slide show)
Fresh fish (haddock) and VEGETABLES. He did a very good job!

Green Salad, Avocado Cream and Peppered Pears


My husband went shopping this morning, of course without a list, and came back  with meat but without vegetables. 
"Men don't eat vegetables". Where did I read that again? 
So there will be limited amount of greens on our table tonight. 
I took the rest of our sandwich salad, a piece of cucumber, celery, an avocado that has been travelling with us about 5000 miles and invented a salad with creamy avocado sauce topped by pear slices seasoned with fresh ground pepper. How does that sound?
Additional we got pork chops and potatoes.

Bea's Chickpea-Banana-Squash Curry


Today I run out of veggies when it came to supper time.
Peter asked: " Why don't you take the car and go get some carrots?" 
But I decided to take what we have and do the shopping tomorrow morning.
I opened up the laptop (what did I ever do without the internet?), and filled these words into the browser's search field: "chickpeas , tomatoes,  bananas."
That's what I basically had. 
Within seconds there were several recipes that featured a dish called "Chickpea -Banana-Curry". 
Sounded interesting to me.
One recipe added squash to the whole. No problem for me since I had some jars with canned squash in the cupboard.
Bea's Chickpea-Banana-Squash Curry
And this is the dish we ate made after a combination of several recipes.
Ingredients:
1/2 can chickpeas (rest from yesterday)
1/2 can diced tomatoes (rest from yesterday)
4 tbs. canned squash (Acorn Squash I canned in the fall)
1 half ripe banana
1/2 cup rice
onion
garlic
beef broth
Half and Half coffee creamer
Pina Colada (Coconut/ Pineapple Juice) leftover from the Happy Hours :))
ground Cumin, Cinnamon, Ginger, Turmeric (1/2 tsp each)
Frozen Cilantro leaves
Fry onion, rice, chickpeas and garlic in a tbs. oil for 5 minutes. Add squash, tomatoes, broth, 1/2 cup of either juice and creamer. Season with spices to taste and simmer until rice is done, about 15 minutes. Add sliced banana, chopped cilantro and simmer about 5 more minutes. Serve. 


Peter's comment, who is not a fan of chickpeas: " Yum, that's very good, honey!"
Win-win situation and we got a vegan dish on the table.


Als ich das Abendessen zubereiten wollte fiel mir auf das wir ja gar keine Gemüse mehr im Kühlschrank hatten. Was tun?

Bea's Surprise Stew

After a busy morning with emptying the coach of kitchen stuff we took a trip to the nearby beach for a stroll.

We returned with a garbage bag full of beer cans and bottles. Some people were busy littering here all winter long. What a shame!


Still tired from the long journey I decided to make an easy dinner tonight. 
A surprise stew after looking around what I could find in the cupboards and fridge. Good to have my real kitchen back!
Ingredients:
garlic
onion
rice
celery
1/2 can of diced tomatoes
1/2 can of chickpeas
1 bratwurst sausage
broth cooked from the leftovers of the chicken we ate yesterday
salt, pepper, Worcester sauce
Fried onions, celery and garlic. Filled up with chicken broth, rice, diced tomatoes and chickpeas. Boiled this while I did the dishes and added slices of sausage 10 minutes before serving. 
Dessert: pear with chocolate sauce.

Vormittags wurde zuerst das Küchenmaterial aus dem Bus ins Haus geräumt, anschließend unternahmen wir einen ausgedehnten Spaziergang am nahegelegenen Strand.
