Hearty Soup and Fruity Cookies


While hubby was out in the cold I decided to cook a good vegetable soup.
Nothing is better than a hearty soup or stew on a cold day.

Done that I made a quick batch of cookies.
Well, they didn't turn out as the should. 
They turned out flat, flat. :((

But they taste delicious! :))
I guess I should have chilled the dough before baking. 
The recipe is very easy, though. Done 15 cookies in 30 minutes.

Ingredients/ Directions:  


Orange Coconut Cookies (Source: Our Canada, Apri//May 2013)

1/2 cup butter, softened (NOT fluid)
1/2 cup confectioners' sugar
1/2 cup grated orange peel (I had only grape fruits available)
1/2 cup all-purpose flour
1/4 cup cornstarch
1 cup coconut flakes.
NO eggs needed.
In a bowl mix butter and sugar. Stir in orange peel. Combine flour and cornstarch, then add to creamed mixture.
Shape into 1 inch balls, then roll in coconut flakes. Place 2 inch apart on ungreased cooking sheet. Bake at 350 F for 14-16 min. Remove to wire racks to cool. 

Easy Vegetable Soup

2 carrots, sliced
1 slice of rutabaga, cubed
1 cup of sliced leek
1 cup of sliced celery
1 cup of kale, chopped (I always try to have a bag of it frozen)
1 small onion, sliced
2 potatoes, cubed
2 cups of water or broth
salt
pepper

Bring water or broth to a boil. Add all ingredients and simmer about 30 minutes or until potatoes are done. Season. 
For hubby I fried some bacon and added it directly to his bowl.
Variation: add pieces of sausage into the soup.
Serve with or without fresh bead.
