Stir-Fried Veggies with grilled Chicken


Diverse Vegetables


Have not heard anything from hubby today, but yesterday he had a flat tire about 2 hours down the road. :(


There will be a few days with Dinner for One and I will just cook what I fancy. I love stir-fried vegetables. So my dinner is very simple: a big pan with stir-fried vegetables and a little bit of fried chicken meat.
 Ingredients:
1 carrot,
1 parsnip
some rings off a leek
1/2 apple
1/2 cup of chicken meat
salt, pepper, nutmeg, sugar

Chop all vegetables in bite size pieces and fry in 2 tbs oil until tender. Add the chicken meat to warm up and the apple chunks just about 3 minutes before the rest is done. Season with salt, pepper and a dash of nutmeg. Some might like to add 1/2 tsp of sugar. 
I had reduced apple juice that was just fine as a dressing.

That is kind of a sirup I made from clear apple juice. It has to simmer for ever until the juice becomes sirupy. Great to use in salads or with stir-fried vegetables.


Die nächsten Tage wird nur Dinner für eine Person gekocht da ich im Moment Strohwitwe bin. Heute ist es ganz einfach. Da ich sehr gerne Gemüsepfanne mag gibt es heute eine große Pfanne mit kurzgebratenem Gemüse und etwas vom Huhn dazu.
Zutaten: 
1 Karotte
1 Pastinack
ein paar Ringe von einer Lauchstange
1/2 Apfel
ca 200 g Hühnerfleisch
Salz, Pfeffer, Muskat, Zucker
Die Gemüse in dünne Streifen oder Ringe schneiden und mit 2 Eßl. Öl in einer Pfanne garen. Das gebratene Hühnerfleisch zum aufwärmen dazugeben, die Apfelstücke zu allerletzt. Mit Salz, Pfeffer, Muskat würzen. Einige mögen vielleicht auch eine Prise Zucker. Ich habe mir so eine Art Apfelkraut (reduzierter Apfelsaft) gemacht und das drüber gesprenkelt. Schmeckt gut zu Salaten und Wok-gemüse.


De mærmeste dagene blir det bare dinner for én, jeg er gressenke for tiden. Siden jeg liker grønnsaker blir det en stor panne med sauterte grønnsaker og litt kyllingkjøtt til middagen idag.
Ingredienser:
1 gulrot
1 pastinak
noen ringer fra en purreløk
1/2 eple
ca 200 g stekt kyllingkjøtt
Skær grønnsakene i tynne strimler eller skiver of fres dem i 2 ss matolje inntil de er mør. Tilføy kyllingkjøtt til oppvarming og eple bitene helt mot slutten.
Smak til med salt , pepper og muskat. Kanskje noen liker også litegranne sukker. 
Jeg brukte redusert epplejuice som jeg laget selv for noen uker siden. Det er eplejuice kokt for mange timer inntil den blir seig som honnig. Deilig in salater eller til wok-grønnsaker.
