Black Bean and Corn Soup


Black Beans and Corn

There is not much time for dinner today. I will soon be on my way to the airport to pick up my husband. So yesterday I made a hearty soup and put it in the fridge for later this evening.


Ingredients: 
1 tbs. olive oil
1 small onion, chopped
1 clove of garlic, minced
1 tbs. chili powder
1/2 tsp. ground cumin, ground
1/2 tsp coriander, ground
1 -15-ounce cans black beans, rinsed
1 -15 oz can corn kernels
2 cups water
1 cup crushed tomatoes
¼  teaspoon salt
1 tablespoon lemon juice
4 tbs. sour cream (optional)
2 tbs. chopped fresh cilantro (optional)
2 sausages, in slices
Rinse beans. Saué onions and garlic in olive oil for 2 minutes. Add tomatoes and herbs. Bring to a boil. Add corn kernels and beans. Simmer for 8 minutes. Season with lemon juice and cilantro. Heat the sausage slices with the soup. Serve with sour cream if desired.


Heute gibt es einen Bohnen Eintopfsuppe. Das paßt am besten, denn ich muß J.P. vom Flughafen abholen. Da bleibt nicht viel Zeit zum Kochen. Die Suppe war gestern abend schnell gemacht und wartet nun auf uns im Kühlschrank.


Zutaten für 2 Pers.
1 Eßl Olivenöl
1 kl Zwiebel, geschnitten
1 Knoblauchzehe
1 Teel Chilipuder
1/2 Teel Cumin, gemahlen
1/2 Teel Coriander, gemahlen
1 kl Dose schwarzer Bohnen
1 kl Dose Maiskörner
1 kl Dose eingemachte Tomaten
Salz, Saft einer Zitrone
Creme fraiche
2 Würstchen 
Die Zwiebel und den Knoblauch in Olivenöl anbraten. Dann Tomaten, Bohnen und Mais dazugeben. Mit den Gewürzen und dem Zitronensaft abschmecken. Die in Scheiben geschnittenen Würstchen in der Suppe wärmen. Mit Creme Fraiche servieren.


Idag blir det suppe igjen. Noe som passer bra fordi der er ikke mye tid tilovers for matlagingen, jeg må hente gubben fra flyplassen idag. Jeg laget suppen igår kveld og den venter på oss i kjøleskapet.


Ingredienser for 2 pers.
1 ss olivenolje
1 små løk
1 fed kvitløk
1 ts chili pepper
1/2 ts cumin, (spisskarve)frø, knust
1/2 ts koriander frø, knust
1 små boks hermetiserte svarte bønner
1 små boks hermetisert mais
1 små boks hermetiserte tomater
salt, juice av en sitron
surkrem
2 pølse, i skiver
Fres løken og hvitløken i olivenolje for 2 minutter. Tilføy tomater, bønner og mais. Smak til  med krydder og sitronjuice. Småkok i noen minutter. Varm pølsebitene i suppen. Serveres med surkrem.
