This was a very stormy day. Rain, Sleet and very strong winds and our motorhome was rocking all day. Our dog Molly relishes being in the camper again. Here she is allowed on the couch, what was not the case in the house.
She slept all day long.
But now the skies are clear again and there is no snow on the ground and tomorrow we will start out trip south.
Apples, Cranberries and Ham |
Ingredients for 2
1 cup noodles
2 tsp. butter
1/2 cup ham, cut into cubes
1 bunch green onion, chopped (I didn't have that)
1 sweet apples, cut into small pieces
1/4 tsp. nutmeg
1/2 cup apple sauce
1 cup sour cream
1 cup sharp cheddar cheese, grated
2 tbsp. chives
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup dried cranberries
Cook pasta according to package directions, drain. Melt butter in large skillet and fry onion for 3 minutes. Add apples and cook until apples are golden and on the way to become soft. Add nutmeg, apple sauce, and sour cream. Add ham, cheddar and chives, stir until cheese is melted. Season with salt, pepper, and cranberries. Add sauce to pasta and toss to coat.
Heute war es sehr windig. Regen, Graupel und stürmischer Wind. Unser Camper schaukelt den ganzen Tag aber jetzt ist es wieder klar und morgen werden wir im Sonnenschein in Richtung Süden starten.

Nudeln mit Äpfeln und Moosbeeren
Zutaten für 2 Pers.
200 g Nudeln
2 tsp. Butter
125 g gekochter Schinken, on Würfel
1 Bund Frühlingszwiebel, klein geschnitten
1 süße Äpfel, in kleine Stücke geschnitten
1/4 Teel. Muskat
125 ml Apfelmus
200 ml creme fraiche
200 g geriebener Hartkäse
2 Eßl. Schnittlauch
Salz, Pfeffer
125 g getrocknete Moosbeeren
Die Nudeln werden nach Vorschrift gekocht. In einer Pfanne die Butter schmelzen und die Zwiebeln darin glasig dünsten. Die Äpfel hinzufügen und fast weich kochen. Apfelmus, Creme Fraiche hinzufügen. Mit Muskat würzen. Dann Schinkenwürfel, Schnittlauch und Käse in die Pfanne geben. Mehrmals wenden und mit Salz und Pfeffer würzen. Mit Moosbeeren bestreut zu den Nudeln servieren.
Nudler med epler og tranebær
Idag fikk vi oppleve den første høststormen. Regn, sludd og sterk wind. Bobilen gynget hele i dagen, men nå er himmelen klar igjen og vi endelig kan starte mot sør.
Ikveld hadde vi noe fantasifull. Nudler med epler og tranebær.
Ingredienser for 2
200 g nudler
2 ts smør
125 g kokt skinke, i terninger
noen vårløk, i småbiter
1 søt eple, i terninger
125 ml eplessaus
200 ml surkrem
200 g gammel cheddar, revet
2 ss gressløk
salt, pepper, muskat
125 g tørket tranebær
Kok nudler som angitt på pakkningen. I en panne fres løkbiter i noe smør. Tilføy eplebiter og kok inntil nesten myk. Hell i surkrem, epelsaus and tilsmak med muskat. Rør in skinke, gressløk og ost. Bland all well and tilsmak med salt og pepper. Server på nudlene med tranebær på toppen.
