Salmon quiche and patties


As you maybe realized, I added pages to my blog. I figured that I got so deep into the birding and travelling that that my blog title soon doesn't apply any more. :))
One page brings you directly to our earlier travel adventures and the other shows all the bird photos I have taken. Maybe I add other pages later. You will see.
Today I added more of February 2006 (Corpus Christi, TX) and the newest guests at my feeder (house finch, white throated sparrow).

Back to food.
Salmon - J.P. came back with a big package of smoked salmon.
The first two days we had salmon sandwiches for lunch.
Then he said: "I think we have to cook something with salmon. We 
cannot keep it too long in the fridge. 
Get creative!"
So, I got creative.
Yesterday we had salmon quiche and salmon patties.

Salmon casserole and other stuff

After 48 hours of being wired, it was good to get rid of the stuff.
Luckily I didn't have to go to St Stephen for the return, I just dropped it off at the local medical centre. They will take care of the rest.
Since we had another dim and rainy day I got J.P. to look at the one room upstairs where we have all our clutter. Boxes over boxes of stuff we are lugging around from one place to the other. Nicknack, christmas decorations, tapes, CDs, just stuff and tons of books in German, Norwegian and English. The best thing would be to get rid of it all, but we have a "gatherer" in the family. ;))
So, I cannot just go and throw it all out. That would mean WAR.
He started to sort through a few of the boxes and "discovered" some old, fascinating books. The whole episode lasted about 30 minutes.
Now he sits in the den and will pour over them for the next weeks or so. I say, that way we never get the job done. :((
Maybe that's the stress we are talking about?
Well, tonight we had another experimental dinner dish.
Turned out really good.
Salmon casserole with potatoes
Ingredients: for 2
1 can salmon, drained (took fresh salmon, cut in slices)
1/2 cup onion, chopped ( took leek instead)
1/2 cup celery, chopped
3 medium potatoes, boiled, then thinly sliced
salt, pepper, sugar
garlic salt, chili sauce
4 eggs, beaten
2 cups milk
ready mustard, curry
dill
Instructions:
Preheat oven to 350 ºF (190 ºC)
Boil whole potatoes for about until done. Cool and cut into thin slices. I left the skin on, it gives some colour to the picture.
In a oven proved form layer potato slices, onion, celery and salmon. Season each layer generously with a comination of sugar, garlic salt, pepper, dill and a dashes of chili sauce. The weight is on seasoning right, otherwise the whole dish will taste bland.
In a bowl beat eggs and milk with 1 tblsp mustard and a dash of curry powder.
Pour the mixture over the layers, cover with aluminum foil and bake for about 50 minutes.
