Sauerkraut and Bratwurst (Brats)

That must be the best known German dish. Some people think that Germans eat a lot of Sauerkraut, that is not true but it is truly on the menu.
In Norway it is eaten mostly with caraway seeds. While in Germany some use bay leafs, some caraway seed, some pineapple and others swear it has to be cooked with lard. Well, we like it without.
We need 1 can sauerkraut, 1 can pineapples, 1-2 brats per person, 3-4 potatoes, 1 onion, 1/2 cup of bacon bits. Salt, sugar, nutmeg, bay leafs (crushed), caraway seeds and oil.
Boil 4-5 potatoes for about 30 Minutes, then mash them with a little milk and butter.
Take a small can of sauerkraut and wash the kraut in a colander. This way it will not be for tart. Mince an onion and some bacon and fry them in 2 tbsp vegetable oil. Add the sauerkraut and 1/2 can of pineapple, juice and fruit. Simmer about 20 minutes. Season with salt, nutmeg, 2 tbsp sugar, 1/2 tsp bay leafs, 1/2 tsp caraway seeds. Fry cooked bratwurst (brats) until brown. 
Bratwurst and Sauerkraut

Bratwurst mit Sauerkraut
1 kl. Dose Sauerkraut, 1 kl. Dose Ananas, 1-2 Bratwurs per Pers., 3-4 Kartoffeln, 1 Zwiebel, 125 g geräucherten durchwachsenen Speck. Salz,Zucker, Muskat, Lorbeer Blätter, Kümmelsamen, Salatoil.
Die Kartoffeln etwa 30 Minuten kochen, dann abgießen und mit Milch und Butter zu Kartoffelmus verarbeiten. Das Sauerkraut etwas auswaschen, dann wird es nicht so sauer. Die Zwiebel und den Speck würfeln und mit 2 Eßl Öl anbraten. Das Kraut dazugeben und mit 1/2 Dose Ananas, Saft und Frucht, auffüllen. Alles bei mittlerer Hitze etwa 20 Minuten kochen. Mit Salz, Muskatnuß, 2 Eßl Zucker, 1/2 Teel. Lorbeeerbätter, 1/2 Teel. Kümmelsamen würzen. Die Bratwürste in der Pfanne mit wenig Fett braun braten.


Stekte pølser og surkål (tysk surkål)
1 boks med hermetisk surkål, 1 boks med hermetisk ananas, 1-2 kokte, hvite grill pølser per person, 4+5 poteter, 1 løk, 125 g bacon. Salt, sukker, muskat, laurbær blader, karve, matolje.
Kok poteter i ca 30 minutter, Lag deretter potetmus med litt melk og smør.
Rens sauerkrauten med vann slik at det ikke blir for sur. Kjær en løk og 125 g bacon i små terninger og fres i 2 ss matolje. Tilføy sauerkrauten og 1/2 boks med ananas, juicen og fruktbiter. La det koke over mellom varme i 20 minutter, Smak til med salt, muskat, 2 ss sukker, 1/2 ts knuste laurbærblader,1/2 ts karve. Brun pølsene i litt oje i en panne.
