Today salmon is on the menu. I found a recipe that really turned out well. Finally I had use for the strange spices that came with my spice rack I bought last fall. I also will make a change. I am now convinced that it is better to make a ingredient list at the top. I wanted to be different than other blogs and name the ingredients during the text while I am preparing the dish, but it seemed very impractical when I wanted to redo the same dish. I had to read through the whole text again in order to find out what I had used last time. So, here we go:
Marinade: 1/4 cup orange juice ( 4 tbs.)
2 teaspoons fresh lemon juice
1 boneless salmon fillet, 5oz each and 1 inch thick
Seasoning: 1 teaspoon brown sugar
1 teaspoon paprika
1/2 teaspoon garlic/salt powder
1/2 teaspoon onion powder
4 coriander seeds, grounded or a tiny amount ground coriander
1/4 teaspoon cayenne pepper
4 grounded cumin seeds, or ground powder
1/2 teaspoon canola oil
Mix together orange juice and lemon juice. Place salmon in a Ziploc bag and pour the juices over the salmon. Turn salmon to coat well on all sides. Marinate in the refrigerator for 30 minutes.
Combine all spices in a small bowl.
Preheat oven to 400°F. Lightly oil a shallow baking dish with canola oil. Remove salmon from Ziploc bag, discarding marinade.
Pat dry with paper towels. Rub spice mix all over salmon. Transfer fish to baking dish and bake until done, 10-12 minutes.
Be light on cumin and coriander, the original said 1/4 to 1/2 teaspoon. I think that would be an overpowering Taco taste.
On the whole: We liked it very much. A real good recipe.
Side dishes: cooked potatoes and a cucumber/tomatoe salad.

Den Lachs für eine halbe Stunde in eine Beize von 4 Eßl Orangensaft und 2 Eßl Zitronensaft legen. Dann den Fisch herausnehmen und abtrocknen. Mit einer selbstgemischten Würze einreiben, in eine feuerfeste Form geben und bei 200 C ca 15 Minuten im Ofen garen. Dieses Rezept hat uns beiden sehr gut geschmeckt.
Für die Würze mischt man:
1 Teel. Rohrzucker 1/2 Teel. Knolbauchsalz1/4 Teel Cayennepfeffer
1 Teel. Paprikapulver 1/2 Teel. Zwiebelsalz 1/2 Teel Salatöl
4 zerdückte Cuminsamen, oder eine Prise Cuminpulver 4 zerriebene Coriandersamen, oder eine Prise Corianderpulver
Man muß mit Coriander und Cumin vorsichtig sein sonst schmecken sie zu sehr durch.
Idag er det laksefilet med kokte poteter og agurk/tomatsalat.
Laksen må ligge for 30 minuter i saften av 4 ss appelsinjuice og 2 ss sitronjuice.
Så ble fisken tørket av og en krydderblanding blir fordelt over fiskens overflate. I en ildfast form ble den satt i ovnen og bakt ved 200 Grader i ca 15 minuter. Det smakte kjempegod.
Krydderblandingen lages av;
1 ts brun sukker 1/2 ts hvitløksalt 1/4 ts chilipepper
1 ts paprikapulver 1/2 ts løksalt 1/2 ts matolje
4 knust Kuminseeds eller en knipe med kuminpulver
4 knust Korianderseeds eller en knipe med korianderpulver
Vær forsiktig med spisskumin (Taco smak) and koriander slik at de ikke smaker overveldende.
